shellinit: use right Kibana and Elasticsearch config #558
Description
So far elastic-package stack shellinit was static and didn't distinguish stack families (7.x, 8.x). With different configs for Kibana and Elasticsearch there might be different values.
The goal of this issue is to support different configs and different profiles used.
Please address the FIXME introduced in: #553
