switch from vercel/kv to upstash/redis

Switches the redis client since @vercel/kv is deprecated.

To test:

• From an integration for ACME, "Open in ACME Corp".
• Copy document.cookie
• Go to the same path on the preview deployment domain, https://example-marketplace-i-git-1534bb-acme-marketplace-team-vtest314.vercel.app/
  • The raw domain will 404 because there's nothing at the root
• You'll probably get a 500
• set document.cookie to the value copied
• reload
• see the data you expect
