Lift pin on `xarray` for `xesmf`

The issue that has been preventing us from lifting the pin on xarray when running with xesmf has finally been addressed: pydata/xarray#7794

Once the next xarray is released, we should be able to run tests on the xesmf functions using newer xarray.
