PyPy v.7.3.7 has just been released and now includes PyPy3.8 (with the CPython 3.8.12 stdlib)
Let's test it, and also remove 3.6 from the CI at the same time to save some CI time/resources (will also be done in #5768 but let's speed up builds now).
Let's also start the macOS builds before the Ubuntu ones; macOS is a bit slower so this gives it a head start and can make overall build times that little bit quicker.
