Changes proposed in this pull request:

pypy-3.7 is now 64-bit, update matrix to reflect this
include PyPy instead of excluding it to simplify matrix
remove unused matrix variables platform-vcvars and platform-msbuild


          remove unused variables, PyPy 7.3.4 ships 64-bit binaries for Windows
