This sounds great and straightforward to do.
Can you separate this into its own commit? Right now it's not obvious which projects are being dropped as "lacking notability" vs "included as part of a wider organization umbrella". |

Some of the projects listed are part of larger umbrella organizations, which have many project using Meson. Instead of listing every single project from them, list the organization itself and a couple of major projects (if we have any listed) from those organizations.
This removes a lot of projects from our list of users, unless they are very notable.

Separate notable organizations that have many projects using Meson from more independent projects, listing only a few very big projects for each (if there were any already on the page. This also trims down the list of projects that don't belong to such an organization to list only very notable projects, rather than many small projects.
