Elasticsearch image tag in OIP should be pinned

In OIP we've recently bumped our elasticsearch client to version 8, which requires connecting to the same major version of ES (this was probably true earlier as well, we just didn't hit any edge cases). For predictability and keeping things explicit, we should pin the image tag for ES so there's no surprises there in production.
