Add capabilities to read jwt from a file instead of a string

Currently the jwt secret has to be passed as a string, this can be inconvenient as all EL/CLs take this file as a file (kurtosis struggles).

Workaround in kurtosis was this: ethpandaops/ethereum-package#308
