Allow removing / renaming default prometheus labels

### Issue Description

My organization has specific keys we use for the default prometheus labels like `code`, `url`, `method`.

I'm fine adding in the appropriate ones, but the old ones are still around. It would be great if we could remove them (and/or rename them)
