Integrate the latest `CatalystSignedDocuments` updates

Summary

Need to update and align with the event-db migration strategy to integrate a latest updates for the CatalystSignedDocuments object input-output-hk/catalyst-libs#338.

Description

• Apply the branch = "feat/new-cat-signed-doc" as a ver for all catalyst-libs dependencies
• Fix all the raised compilation issues
• Make a proper migration of the signed_docs event-db table
• Properly test the database migration using the old format documents, test the cat-gateway API

/v1/document/index endpoint ONLY return the old format documents.

Create a new /v2/document/index endpoint.
This endpoint should serve both: deprecated and new formatted documents.

API request:

1. DocumentIndexQueryFilter::doc_type to be a Option<Vec<DocumentType>>. So it will allow to find an any document which type is in the list.
2. All fields which are Option<IdAndVerRefDocumented> should become Option<Vec<IdAndVerRefDocumented>>, with the same meaning as previous, it will allow to find an any document which reference is in the list.

API response:

1. update the FilteredDocumentReference to be an array of document references and for each DocumentReference add a new optional cid field
