chore(pytest,deps): update from pytest 7 to pytest 8

Pytest 8 offers a few advantages (we should have switched long ago!):
- Redesigned Hook System with better error reporting and more stable hooks.
- Comprehensive Type Annotations.

@marioevz once the final Prague releases are out the way, let's update! I think it'll help us take our plugins to the next level 😄
