Backports the following commits to 8.19:

ESQL: Shore up test (elastic#130217)
8818126 
Adds a `_forcemerge` to a test to try and avoid spurious failures. The
tests expect everything in one segment and the bulk mostly does that-
but `_forcemerge` should *double* force it.
