Maintenance: Update SAM CLI templates to 2.0.0

Summary

We should update the AWS SAM CLI APP templates for Powertools (Java) to use version 2.0.0. The documentation is still pointing to them but it will create a v1 Powertools project.

Actions:

1. Remove SAM section from documentation (https://docs.powertools.aws.dev/lambda/java/2.0.0/#install)
2. Send PR to https://github.com/aws/aws-sam-cli-app-templates/tree/master/java11/hello-pt-maven
3. Add back an updated SAM section in documentation homepage

Why is this needed?

We don't want to confuse customers getting started with and old version and having to update manually immediately.
