Upgrade to faker v9

It looks mostly gradual. The primary breaking changes are:

1. Requires Node v18+
2. Drops support for Typescript 4

Would you be open to a PR to do this upgrade?

Yes that would definitely make sense to upgrade faker, node and typescript

Feel free to open a PR as long as you focus on this upgrade and not refactoring the code unless necessary
