improve: change sotoon api to v2.1 with simplification

Changed the Sotoon api from v2 to v2.1 for simpler user experience.

• CI jobs passed
• Tested locally
• Not a breaking change (fully backward compatible from client side)
• Reduce number of input arguments from 3 to 2
