Update to DinoV3

As replication efforts come to a close, we want to start getting ready to train models using the latest versions of model, which in this case, is DINOV3.

This task requires identification of what changes have been made to the dinov2 codebase and transferring them to DINOV3

Steps would look like this:

• Identify changes from DinoV2 to current codebase
• Identify differences between DinoV2 and DinoV3
• Come up with list of changes to go from current code (pathology DinoV2) to pathology DinoV3
• starting with dinov3 codebase, add in updates from pathology dinov2

This could be a table, a list of git diffs, or something else entirely.

After the changes have been identified, the code needs to be updated, and then tested to see if it runs.
