Remove old dashboard from the docker-compose example

Problem

Current docker compose stack provisions both an old (adapted to v1x and now deprecated) and a new dashboard (compatible with metrics as exposed in v2.x).

This is confusing, see #430

Solution

Do not provision the old dashboard, remove it from repository.
