Add LLM Observability Docs

The Datadog LLM Observability product now has a LiteLLM integration that can be used to automatically log traces in their product. This PR updates the logging docs to direct LiteLLM users to use this feature instead of the datadog_llm_observability callback.

what is the benefit of this approach over the existing callback?

This flow also adds a new dependency on the user.
