Environment variables not fully understood

Hello! So I am trying to fully understand how each variable is being used, for example I am using SLACK_USERNAME: "GitHub Bot" and it seems it isn't used:

Also I don't understand where is SLACK_ICON_EMOJI being used.

Is there any way to be able to test these variables without actually performing X number of merges?
